Strawberry Shortcake

For the dough: 450g self rising flour , 2 tsp baking powder , pinch of salt , 150 butter , 150 sugar , 2 eggs , 2 tbs milk and grated rind and juice of 1 orange

Method: Sift flour with baking powder , salt into a mixing bowl. Rub butter till the mixture resembles fine breadcrumbs. Add the sugar , bind with the eggs , milk and orange juice and work to a smooth dough and leave to rest . Roll out the dough to a thickness of 1 cm and cut out 6cm rounds , brush with milk and bake at 180c until golden brown. When cool split in half and fill with whip cream and strawberries , sprinkle icing sugar on top.
