Hot Cross Buns




600g flour 1/2 tsp salt, 2 tbsp sugar , 60g butter , zest of an orange , 11g yeast , 50g dried fruit , pinch of mixed spice and 350ml warm milk.
To make the dough put the flour , salt , sugar and butter in a large bowl and rub together till the mixture resembles breadcrumbs.Add in the yeast,zest,dried fruit and mixed spice and enough warm milk to make a soft dough.Then knead well for 5min , cover and leave to rise till it doubles in size.Knock back the dough and mould into 10 round balls,cover and allow to prove again.Egg wash and bake at 180c for 12 to 15min.To glacé the buns when they are still hot put 100g sugar and 100ml water in a bowl and boil together until the consistency of a thick syrup.
