Coconut flan


Coconut flan:
For the pastry : sieve 600g plain flour rub in 300g margarine then add 200g sugar , 3 eggs and vanilla form a dough and let it rest for 1 hour.
For the coconut filling: beat 6 eggs , 1 1/2 cup sugar until thick and creamy, then with a wooden spoon mix 6 cups coconut and 45g melted butter.
Roll the pastry in a flan ring spread with strawberry jam put in the coconut filling and bake at 180c till golden brown. When ready glaze with apricot jam.
