
The beautiful thing about this cake, besides its moist lusciousness, is that it all mixes up in one bowl, and you don’t even need beaters. It’s only mildly sweet, too; much of the sweetness comes from the apples & prunes.
- Ingredients:
- 2 cups plain white yogurt
- 2/3 cup olive or vegetable oil
- 3 eggs
- 1 and 1/2 teaspoon vanilla
- 1/4 cup fresh lemon juice and grated zest of a lemon
- 4 apples cut into chunks about 1/2 inch pieces
- 1 cup sugar
- 2 and 1/2 cups flour
- 2 and 1/2 teaspoons baking powder
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 20 stoned prunes
- topping: 2 teaspoons mixed with 1/2 cup soft brown sugar. 1 tablespoon softened butter
Method:
In a bowl mix the liquid ingredients and stir in the chopped apples.
In another bowl sift the flour,baking powder & baking soda.
Add the sugar ,grated lemon zest,salt & cinnamon.
Pour the liquid mixture over the dry ingredients and mix with a wooden spoon until it is smooth do not over beat.
Then spread half the batter in the dish and place the prunes over the batter then sprinkle 1/4 of the cinnamon & brown sugar over the layer.
Mix the cinnamoSpread remaing batter and smooth over.

Bake for about 40-50 mins ,if you see that top is browning yet its still not ready when you
Let it rest 15 minutes before serving. Can be served with warm custard . check with toothpick or skewer cover top with foil .
