Sarah’s Birthday Cake

I woke up on Mother’s day early and all were still sleeping so I decided to bake my daughter Sarah’s birthday cake. Her birthday is 2 days after Mother’s day but as we were going to meet up the whole family ,grandma ,uncles etc we decided to have a double celebration. Eat out then come for dessert  at home . I made her favorite chocolate cakes sandwiched and covered with chocolate fudge and then decorated with sweets. This is the same cake recipe I used for another birthday cake I made the one decorated with smarties,kitkat etc.

Easy Chocolate cake:
Sift 2 cups flour,3/4 cup unsweetened cocoa,11/2 tsps baking powder,2 tsps baking soda and a pinch of salt.
Mix in 2 cups sugar.
Add 2 beaten eggs,1 cup milk,1 tsp vanilla and 1/2 cup oil.
Then beat in 1cup boiling water with 2 teaspoonfuls coffee mixed in.
Divide mixture between 2 cake pans greased and lined with baking parchment ,lightly greasing the baking parchment as well.
Bake in preheated 180C oven for 30-40 minutes . Checking with toothpick or skewer .

      Hi I used ready made frosting for this cake but if you wish to make your own this is a recipe I use .
      3 cups icing sugar
      3/4 cup unsweetened cocoa
      125 g softened
      3 – 4 tablespoons evaporated milk or cream
      1 teaspoon vanilla
      Sift sugar and cocoa together into a large bowl. In another bowl combine 1 cup of sugar mixture with butter and 1 tablespoon cream, beating until smooth. Add another cup of sugar and another tablespoon of cream, beating well. Continue until all ingredients are combined and frosting is fluffy. Beat in vanilla. Spread on cake.

    Hi Sarah, im a big fan of your recipes as I follow you on ‘the kcina’. I am still a beginner when it comes to cooking. What type of flour are u using? Self raising or plain flour? and also can I bake it in 1 tin?

      Hi the flour needed for this cake is plain flour and yes it can be baked in 1 tin. I cook it in 2 tins so it is easier to sandwich together.Glad you enjoy my recipes. If you need anything just ask. Best regards ,Lorraine
