I like the taste of roasted vegetables ,find them more tasty then boiled . I usually boil the cauliflower then either drizzle some olive oil over it or use another dressing,dip it in egg and fry it,make cauliflower patties or au gratin in the oven. I saw this recipe on food network and thought I try it. Must say my family and I loved it and it will be on my menu from now on 🙂
Ingredients:
1 cauliflower cut into florets
1 large onion thickly sliced (next time will use more)
sliced and whole garlic cloves (quantity according to taste)
3-4 tablespoons olive oil
juice of 1 lemon
1/2 teaspoon dried rosemary or thyme
salt and freshly ground pepper.
grated cheese (optional)
Method.
Preheat oven to 190C .
Put all the ingredients in a large bowl and mix well ,I find best using my hands.
Put the cauliflower mixture on a lined baking tin.
Bake for about 15 minutes then take out and turn over so it browns evenly.
After another 10-15 minutes take out and sprinkle some more cheese and bake for some more minutes until brown according to your taste.
