Ricotta and chicken sausage quiche

My family loves this especially Malik my youngest son who loves chicken sausages (Wudy) Goes down a treat or as we say in Maltese tinzilek ghasel a piece of it with a nice cup of tea.DSCF1149 DSCF1152 DSCF1144 DSCF1145 DSCF1147 DSCF1148
I used ready made rolled puff pastry to make this today . In a big bowl beat 500g ricotta,3 eggs ,1 small tin nestle or fresh cream (optional) season well with salt and freshly ground pepper. Put the ricotta mixture on the base of the pastry .Slice chicken sausages and place over he ricotta ,some sliced cherry tomatoes,I sprinkled some zataar (thyme,spice and sesame mix) or some dried herbs of your choice. Grated cheese on top.Turn the pastry edge inward over the filling. Brush the edges with some beaten egg and sprinkle poppy and sesame seeds . Bake in a preheated 180 C oven.
