My Scotch Broth

This reminds me of our maltese kawlata which is made with pork ,as I do not cook pork I make scotch broth using vegetables, barley and lamb. A very filling soup and  It will take the chill out of you on a cold winter’s evening.

Ingredients:

  • 2 large carrots sliced
  • 2 marrows diced
  • 1 large onion chopped
  • 4 potatoes cut into chunks
  • 1 large or 2 small turnips chopped
  • celery sliced
  • 2 tablespoons tomato paste
  • 1 dessert spoon hot curry
  • 500g lamb (sliced leg of lamb or  shanks) Leg of lamb slices will cook faster than lamb shank .
  • seasoning
  • 1.5 ltr stock or water
  • 1 cup barley

Method:

  • Put the chopped veg in a large bowl and drizzle a spoon of oil over it mix well  and then put in a pot and fry a bit .
  • Add the curry and tomato paste .
  • Then pour the stock or water season to taste and put the lamb in.
  • Add the barley over the top of the soup but do not stir .
  • When it starts to boil put it on low heat and let it simmer until meat is tender.
  • Apart from the above mentioned vegetables I sometimes also add cauliflower florets and shredded cabbage.
