A delicious cake made with dried figs and lemon zest.
Ingredients:
- 1/2 cup oil
- 1/2 cup milk
- 1 large egg
- 1 & 1/2 cup flour
- 3/4 cup sugar
- 1/2 teaspoon baking powder
- 1 & 1/2 teaspoon grated lemon zest
- 1 and 1/2 cups chopped dried figs
Method:
- In a jug mix the wet ingredients,oil,milk & egg.
- In a bowl sift the flour and baking powder,add the sugar.
- Pour the liquid mixture and mix until flour is incorporated ,just until smooth do not over beat.
- Fold in the figs and lemon zest .
- Prepare a 9in cake tin or dish and grease and line bottom with parchment paper.
- Bake in 160 C oven for about 35-40mins depending on your oven ,check with toothpick to see if it done.
- After 5 mins turn out of tin and cool on wire rack.
