Beef Kofta Kebabs

n a food processor finely chop a bunch of parsley,a medium sized onion and 4 garlic cloves.Put in a bowl with 500g of minced beef, 1 teaspoon grated ginger ,1 tablespoon of Al Amier kebab spice mix and 1/2 teaspoon of zhoug spice from Dical House and leading supermarkets, If you do not have these spice mixes you need to add 1 tspn coriander,1 tsp cumin,1/2 tspn cinnamon and 1/4 tspn of chili or cayenne pepper,salt to taste,1 tablespoon of lemon juice and 1 teaspoon of baking powder this will help to bind the meat together. Knead with your hands and form into sausage shape or thread on to oiled skewers or if using bamboo sticks make sure to soak these first so they do not burn on the bbq or under the grill. Grill under a medium hot grill for about 6-8 minutes on each side or turning the skewers. You can serve with a yogurt sauce ,made by mixing yogurt with some lemon juice ,finely chopped mint and season with salt and pepper.
