This is a filling and delicious meal. With stew I usually serve mashed potatoes but I decided to serve it with couscous
Red Couscous
Ingredients: • 500g couscous
• 5 tablespoons tomato paste
• 250ml chicken stock
• 1 teaspoon cumin
• 1/4 teaspoon cayenne or chili powder
• seasoning
• 4 tablespoons olive oil
Method:
In a bowl put the couscous with salt to taste and add the olive oil and mix with a fork to coat the couscous grains well.
In a small pot heat a little oil and fry the tomato paste ,add the cumin and cayenne or chili powder.
Pour the chicken stock or water ,season then when it boils put it on low heat and simmer for about 10 minutes.
Pour over the couscous in the bowl ,stir then cover and let it stand so couscous grains cook . When ready to serve fluff with a fork.
Beef,chickpea & veg stew
Ingredients : • 500 chuck steak beef slices cut into bite size pieces
• 2 onions chopped
• 1 can chickpeas
• 2 courgettes (marrows) sliced
• mixed frozen veg or use diced carrots,corn,green beans etc
• 1 pot yogurt
• 1 teaspoon all spice , 1/4 teaspoon cayenne or chili , 1/2 teaspoon black
pepper
Method:
In a large saucepan start by frying the onions and add the spices .
Add the beef and fry til browned.
Then mix in the veg and fry .
Mix in the drained chickpeas.
Add the yogurt and simmer on low heat.
When ready serve with couscous .
