Basmati rice with vermicellini,cashew nuts & sultanas.

My hubby is from Iraq and they eat rice in many different ways . This is one of my favorite   recipes. With vermicellini or angel  hair pasta broken into 1-2 inch lenghts . These are fried before adding the rice then they cook with the rice.


  • 50 -75g vermicellini or angel hair pasta cut into about 2inch lenghts
  • 500g basmati rice rinsed and drained
  • 1 ltr chicken stock or water
  • 1 chopped onion
  • 1 cup cashews
  • 1 cup sultanas
  • 1 teaspoon cumin
  • 2 teaspoons turmeric.
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon cayenne pepper
  • seasoning to taste

Method :

In a pot heat about 4 tablespoons light vegetable oil.

When its hot at the spices and fry to release the flavors then add the chopped onion and cook until transperant.

Add the pasta and cook until its golden,add the nuts & sultanas.

Then add the rice and stir frying for about 2 minutes then pour the stock and mix.

Add the seasoning ,cover let it boil then put on low heat .

Cook until all water is absorbed and rice is cooked.

Serve with kebabs,grilled or roast meat or chicken and salad.
