Whenever I make the chicken & roast veg dish my family enjoy it so I decided to try cooking it with beef burgers .
For the beef burgers mix 750g minced beef ,seasoning and 2 tablespoons of evaporated milk . Mix them well then shape into burgers.You can also use good quality ready made burgers .
Cut an aubergine ,sweet red pepper,yellow bell pepper,carrots,cherry tomatoes in chunks
- 4 garlic cloves sliced
- 1 big or 2medium onions thickly sliced
- I added a sliced deseeded green chili pepper but it depends on taste
- fresh or dried basil
- 1 teaspoon oregano or thyme
- olive oil
- worchestershire sauce
- seasoning
- 1 small tin or 1/2 cup sweet corn
Method:
- Preheat oven to 200C
- Put vegetables except corn in a baking dish.
- Drizzle about 3-4 tablespoons oil over it salt and pepper and some dashes of worchestershire sauce. Mix well with your hands and layer evenly ,always put in a single layer so they roast better and evenly.
- Put the burgers over them ,drizzle some worchgestershire sauce over burgers.
- Bake in the oven for about 20 mins then take out mix the vegetables to turn them over so they roast evenly sprinkle the herbs and add the sweet corn , Turn the burgers over .
- Bake until burgers are ready .
- If leaving in the hot oven cover with a piece of foil so it will not dry up. I used herbs with the roast veg but even spices like paprika ,cumin,coriander or mixed spice can be used . I served them with sliced roasted curried potatoes.
