Oven Roasted Spare Ribs


The other day I passed by the meat section at the supermarket and saw some lovely fresh spare ribs, they looked so tempting!  I really could not resist, so I just got them, even though I had already planned what to do for dinner … I am known to change my mind about a menu, like say … six times in a day ! 🙂

So once home I started to prepare the marinade for these juicy ribs.  I did not have that much time to leave them to marinate for hours as you are meant to, but surprisingly enough, half an hour was sufficient! They came so tender and tasty! I had some mushrooms left, so I just made a quick stir fried white rice and wild rice with mushrooms, sweetcorn and scallions.

You gotta try these ribs!

Here is what you need!

1 kilo of spare ribs
80 ml honey
60 ml soy sauce
30 ml (32 g) soft brown sugar
1 tbsp grated ginger
3 garlic cloves, crushed
1 heaped tbsp tomato paste
Pinch salt & Pepper
1/2 tsp chilli or cayenne pepper
1/2 tsp cinnamon
Fresh rosemary chopped
1 tbsp peanut oil (you can use olive oil as well)
Chopped Parsley to garnish

I find it easier and you will have less washing up to do, if you prepare the marinade in a clean freezer bag or zip lock bag. So mix all the ingredients above, except for the parsley, in the bag and then add the spare ribs. I bought my ribs already portioned. Now combine the ribs with the marinade with your fingers through the plastic bag. Leave to marinade for at least half an hour.  Preheat the oven to about 190 to 200 Deg C.

Line a roasting pan with baking paper and place the spare ribs on it.  Put the pan in the oven and cook for about 45 to 50 minutes, basting and turning every 10 to 12 minutes.

Prepare your stir fried rice in the meantime.  A similar recipe for stir fried rice is on this blog as well.

When cooked, serve with the rice, and garnish with chopped parsley.
