Gluten Free Spaghetti with Avocado & Rucola Pesto


This is a perfect dish to whip up in just a few minutes! It is sooo creamy and thick that you would probably think that it was made with some sort of cream.  So this is ideal for all those who are also Lactose Intolerant!

Ingredients (Serves 2)

1 Avocado, peeled, pitted and roughly chopped
1 Garlic clove, crushed
50g Rucola
1/4 cup grated Parmesan
Juice of half a Lemon
Salt & Pepper
Olive Oil


Start by boiling your pasta.  In the meantime you can prepare your sauce.  Place the crushed garlic, lemon juice, olive oil and rucola in a food processor.  Process until smooth.  Add the chopped avocado, grated Parmesan and seasoning. Process again until smooth.

When the pasta is al dente, drain, but keep a ladleful of the water.  Add some of this water to the sauce so it will not be too thick to mix, especially with gf pasta since it breaks easily when cooked.  Place the pasta in a large bowl and pour in the sauce and gently mix until combined.  Serve garnished with fresh rucola.
