Gluten Free Orange, Choc Chip and Cinnamon Cookies


These delicious cookies are so simple to make and if stored immediately in an airtight container, they will remain as lovely as if they were just baked.  Although I doubt if there will be any left to store !

Ingredients (makes about 20)

230g gluten free all purpose flour (I used Dr Schar)
1/2 tsp xanthan gum
1 tsp baking powder
1/4 tsp salt
80g light brown sugar
20g caster sugar
115g cold unsalted butter
Zest of 1 orange
100g raisins or sultanas
100g dark choc chips
2 eggs, lightly beaten
1/2 tsp vanilla extract
Extra white and milk chocolate to decorate


Preheat oven to 180 Deg C.  Line a large baking sheet with baking paper.

In a food processor, throw in the flour, xanthan gum, baking powder, salt, sugars and chopped butter.  Pulse until the mixture looks like breadcrumbs.  Tip out this mixture into a large mixing bowl and add the orange zest, raisins and choc chips until combined.

Add the lightly beaten eggs and vanilla extract and mix with a wooden spoon until it just comes together into a sticky dough.  Do not overwork the mixture.

With a spoon and using your hands, form small size mounds and place them on the baking sheet, about 5 cm apart to allow room for spreading.  No need to be perfectly neat about it as they will spread.

Bake for around 15 minutes or until the cookies are lightly golden brown.  Cool on a wire rack and then drizzle with chocolate and white chocolate if desired.

This can be easily done with no mess by using two separate plastic bags, in one put a small amount of chocolate and in the other, same amount of white chocolate. Place in the microwave to melt it.  Do this in bursts, every 30 seconds or so, till you see the chocolate has melted.  Then, snip off a small corner of the bag and drizzle over the cookies!
