Gluten Free Chocolate Truffles

Got any left over cake?  This is the ideal way to use it! These lovely one bite treats are perfect for that after dinner treat! And they are sooo easy to make!  I used Gluten Free left over cake, but these can be made with normal cake crumbs too for the non Celiacs!  They make lovely home made gifts too, presented in a gift box!

This is what you need …

300 g sponge cake6 1/2 tbsp icing sugar
2 tbsp softened butter
2 tbsp unsweetened Cocoa Powder
3 tsp Amaretto
Few drops Vanilla or Almond Essence
3 tbsp kibbled and toasted almonds

To decorate you will need, icing sugar, cocoa powder, kibbled almonds and chocolate vermicelli.

Whizz the cake to crumbs in your food processor.  Add the sugar, cocoa, butter, almonds, Amaretto and essence and mix until well combined and smooth.  Roll mixture into small balls.

To decorate – place the icing sugar, cocoa powder, chocolate vermicelli and almonds on separate plates.  Roll balls in them to decorate.  Put into small paper cups if desired.
