Gluten Free Chocolate Brownies


I am not really a ‘Sweets’ kinda person, but I do love the occasional sweet indulgence.  Gluten Free sweets are not as difficult to make as one might imagine and most of them you can hardly detect in the taste that they are actually gluten free.  This is one of them.  These Brownies are so delicious topped with ice cream and then drizzled with chocolate sauce!  Equally nice on their own with a nice cuppa coffee!


150g Choc Chips
113g Butter
2 Large Eggs
220g Brown Sugar
64g Almond Meal or Flour
34g Sorghum Flour *
1/2tsp Cinnamon
1/2tsp Sea Salt
1/4tsp Baking Soda
2 1/2tsp Vanilla Essence
1 cup Chopped Walnuts
Choc Chips to sprinkle on top

How to …

Preheat oven to 150 deg C.  Line a 8 x 8 inch baking pan with baking paper.  Grease the paper so it will be easier to remove the brownies when baked.

Melt the chocolate and butter together in a small saucepan over medium heat, stirring frequently.  Once it is completely melted, remove from the heat.

In a bowl, whisk the egg and then add the brown sugar and whisk until smooth.  Slowly add the melted butter and chocolate mixture into the bowl a little at a time until combined.

In a separate bowl, combine the dry ingredients, the almond meal, sorghum flour, salt, cinnamon and baking soda and stir.  Add these to the chocolate mixture and combine well. Now add the vanilla essence and also the chopped walnuts.

Pour the mixture into your prepared pan, smooth the top and sprinkle with the extra choc chips.  Bake until a knife comes out clean when inserted into the brownies.

Take them out, leave to cool and then cut into slices or squares and dust with icing sugar if desired.


 Notes :-

* If sorghum flour is not available, this can be replaced by either fine brown rice flour or gluten free oat flour.
