Gluten Free Banana, Chocolate & Almond Muffins


I have tried so many recipes for gluten free muffins.  Not that they did not turn out great but they always seemed to lack something …

This time, I have added one secret ingredient to these muffins, maybe it was this ingredient that made these muffins sooo moist! Chocolate Syrup! And they definitely do not taste gluten free! Ooooh, they were lovely with mint choc chip ice-cream!

Ingredients (Makes 12)

ripe bananas, mashed
1/3 cup melted butter
3/4 cup soft brown sugar
2 eggs beaten
1 tsp Vanilla
1 tsp Cinnamon
1 tsp baking soda
1 tsp baking powder
Pinch of Salt
1/2 tsp Xanthan Gum (omit if your Flour Mix already has it)
1 1/2 cups Gluten Free All Purpose Flour
1 tbsp Chocolate Topping Sauce (I used Fabbri Chocolate Topping Sauce)
1/2 cup chocolate chips
1/4 cup kibbled almonds



Preheat oven to 150C.

In a large mixing bowl, mix the butter into the mashed bananas and add the cinnamon.

Mix in the sugar, eggs and vanilla.  In a separate bowl, mix the baking soda, baking power, salt and Xantham gum with the flour and add this to the wet mix.  Add the tablespoon of chocolate syrup and combine.  Finally throw in most of the chocolate chips and almonds and combine gently.  Leave some chocolate chips to put on top of the muffins before baking.

Pour into a greased or paper cup lined muffin pan and bake until a skewer when inserted, comes out clean.
