Juicy marinated chicken tenders and red peppers
skewered on bamboo sticks, basted with tangy sweet
honey mustard barbecue glaze spiked with an Asian
sweet chilli sauce. Sooo delicious!
Ingredients
Chicken thigh meat or chicken breast for two persons
1 Red Capsicum chopped
1/3 cup olive oil
1/2 tsp garlic pepper
1/3 cup barbecue sauce
2 tbsp honey
1/3 cup Chinese Sweet Chilli Sauce
2 tbsp yellow mustard
2 tbsp brown sugar
Skewers
Green onions sliced at a diagonal for garnish
Cut the chicken thigh pieces or breast into large pieces.
Put into a dish or plastic bag. Drizzle the olive oil and
sprinkle the garlic pepper. Put in the refrigerator for an
hour or more if possible.
Thread the chicken pieces onto the bamboo sticks,
alternating with the red peppers.
Prepare the marinade by combining the bbq sauce, the
honey, the chilli sauce, mustard and brown sugar in a
bowl. Whisk until the sugar dissolves.
Grill the chicken skewers under medium high heat for
about 3 minutes on each side, turning occasionally.
Remove from the oven and brush them generously with
the prepared marinade. Keep repeating till they are
done.
I served my chicken kebabs over a bed of rocket with
tomatoes and roasted pine nuts and some molded rice
with spring onions and balsamic glaze.
