  • This is easy and needs hardly any attention if you're busy.

    2 large onions
6 to 8 pork steaks or chops
6 – 8 large potatoes peeled and sliced thickly
    2 chicken stock cubes
    two teaspoons of fennel seeds
Black pepper and salt ( and you can add a couple of teaspoons of curry powder or other spicey seasoning if you like)

You need a large dish to accommodate the meat in one layer

First slice the onions very thinly and place at the bottom of the dish
Sprinkle the onions with salt, black pepper, a teaspoon of fennel seeds…and if you like you can sprinkle a teaspoon of curry powder or a pinch of spicey seasoning and crumble the chicken stock cubes over the onions as well.

Next you trim the fat from the meat and place the pork steaks or chops in a layer on top of the onions.

Then arrange the potato slices on top of the pork and sprinkle anaother teaspoon of fennel over the potatoes and add salt and black pepper (and another pinch of spicey seasoning or curry powder if you like it)

Next you add water sufficient to cover the onions and the meat only. Pour this at the sides of the dish so you don't wash the seasoning and fennel off the potatoes.
Drizzle a bit of olive oil over the potatoes, then cover the pot with a lid or with foil and place in a preheated moderate oven (No. 5 Gas) on the middle shelf and leave for about an hour to an hour and a half. Then remove the lid or foil from the pot and leave in the oven for another hour or so until the potatoes are well browned on top.
