  • I have been trying this recipe lately, and it is no fail .It is easy and they Always turn out great.
    250 gramms ground almonds
    250 gramms icing sugar
    1/2 teaspoon almond essence.
    3 egg whites
    grated rind of 1/2 lemon
    rice paper.
    Whisk egg whites in a bowl, do not overwhisk.
    In a separate bowl mix ground almonds and icing sugar, and add lemon rind and almond
    essence. Add egg whites. Combine well.
    Place on sheets of rice paper using a piping bag and plain nozzle . Place an almond on top of each biscuit, and let them stand for 2 hours or more.
    Bake for about 15 to 20 minutes at 180 degrees. Do not over bake, as they will become crunchy.
