This is much nicer than commercial curry powder…and very easy to make and if you keep it in an airtight jar it keeps well.
Ingredients:
2 teaspoons of black peppercorns
2 sticks of cinammon
12 dried chillies
1 teaspoon of powdered saffron
4 teaspoons cumin seeds
5 cms fresh ground ginger (you can grind this in a pestle and mortar…or even use two teaspoons of powdered ginger if you can't find fresh ginger)
Put all the above ingredients into a dry frying pan and dry fry to bring out the flavours
Let it cool then put the whole lot in a coffee grinder and whizz until it becomes a powder.
Store in an airtight jar in a cool dark place and it will keep for some time.
It's quite spicey so use sparingly to start with and increase to taste.
