  • The connection here is obvious! Recipe for Magrood (which is delicious!):
Filling: one pound dates (stones removed). Mash up in a pan over the heat with one teaspoon of cinnamon; three tablespoons olive oil and a litte rose water (optional).
When mashed up take a handful of the mixture, shape into a ball and roll into a long thick strip.

Dough: Mix 4 cups fine semolina with one teaspoon of baking powder, half cup of plain flour and one cup of olive oil. Mix into soft dough and roll into the shape of a loaf press a deep line along the middle of the loaf and stuff with the date mixture. Roll again into a closed loaf, keeping the mixture inside the dough. Then cut into diagonal 2 inch pieces (like diamonds) and place in a baking tray. Bake in a preheated oven at 200 for about 35 minutes..or until golden brown. Take out of the oven and while still hot pour sugar syrup and/or honey over the whole pieces and leave to soak for a while before serving.

  • This sounds really good and I like the fact that they are not deep fried!!!

  • They're really nice and it's a good point that they are not deep fried!! But I think that the sugar syrup/honey that they're soaked in counteracts that benefit!
