Horns filled with rikotta:
For the pastry: 350g plain flour , 50g margarine, red wine and water. Rub the margarine and flour together add a little red wine and water to form the dough, leave to rest for an hour.
For the filling: 400g ricotta , 75g chocolate chip , 75g icing sugar and 100g glazed cherries.
Roll the pastry very thinly. Cut into round shapes . Place each shape over the cylinder, then fry till golden. When cool stuff with ricotta.

Apple pie

Apple pie:
For the pastry: sieve 600g plain flour rub in 300g margarine then add 200g sugar , 3 eggs and vanilla form a dough and let it rest for 1 hour.
For the filling: peel and slice the apples put them in a saucepan add a little bit of water , some sugar , vanilla , whole cloves and cook for a few minuts.

Coconut flan

Coconut flan:
For the pastry : sieve 600g plain flour rub in 300g margarine then add 200g sugar , 3 eggs and vanilla form a dough and let it rest for 1 hour.
For the coconut filling: beat 6 eggs , 1 1/2 cup sugar until thick and creamy, then with a wooden spoon mix 6 cups coconut and 45g melted butter.
Roll the pastry in a flan ring spread with strawberry jam put in the coconut filling and bake at 180c till golden brown. When ready glaze with apricot jam.

Doughnut sticks

Doughnut sticks :
In a pan pour 400ml water , 2 tablespoon oil , 20g sugar and vanilla and bring to boil . Then mix 260g self raising flour and stir with a wooden spoon you should have a stiff sticky dough . Then heat vegetable oil to 170c in a fryer, then roll the dough into longish sticks and fry to 3 to 5 min until golden crispy. Then toss with caster sugar and cinnamon .

Penne tricolore with bolognaise sauce:

Chop and fry some garlic , onion , carrots , minced beef then pour some red wine , beef stoke , chop tomato , tomato paste and oregano. When it boils lower the temperature and let it simmer for 30min.

Rock cakes


imageRock cakes…. 600g self raising flour , 250g caster sugar , 250g butter , 2 to 3 eggs , 100g sultanas , 100g chocolate chips , lemon zest , vanilla and a pinch of mixed spice and cinnamon . Rub in the butter with the flour to sandy texture then mix sugar and the rest of the ingredients . The mixture should be slightly firm. Then roll them in balls egg wash and bake in 180c until golden brown.

Choux pastry rings

Choux paste rings
For the choux paste : 240 plain flour , 120g butter , 10g sugar , 150ml water and 150ml milk , 3 to 5 eggs.
Bring the water , sugar and butter to the boil in a saucepan , remove from heat. Add the sieved flour and mix in with a wooden spoon , return to the heat and stir until the mixture leaves the side of the pan , then allow to cool, then add the eggs one at a time the paste should be of dropping consistency. Then put the paste in a piping bag and form a round ring, bake at 180c till golden brown. Then let them cool down and split open and fill in with whip cream and strawberries.

For the filling: chop and fry some onions and green pepper , tuna , olives , enchova , fresh mint and mix with spinach.
