Doughnut Muffins


Doughnut Muffins
Today I made a batch of doughnut muffins ,so easy to make .Ready in 30 minutes.
Sift 2 cups self raising flour and 1 teaspoon of cinnamon.
In a jug whisk 1 egg,1/3 cup of oil,3/4 cup of sugar .3/4 cup of milk and 1/2 teaspoon of vanilla. Add the liquid mixture to the flour and beat until the flour is incorporated ,do not over beat or the muffins will be heavy and dense. Fill muffin cases 3/4 full and bake in a 180 C oven for about 20 minutes . Easy Apple Cake


Easy apple cake ..
.just mix allthe ingredients in a bowl with a spoon .
First peel and dice 4 apples and pour the juice of an orange .
In a big bowl put 1 cup light brown sugar,3 sifted cups of self raising flour or use plain flour and add 2 teaspoons baking powder and 1/4 teaspoon of salt. Grated zest of an orange,1 teaspoon cinnamon,1 teaspoon vanilla,3 eggs,1 cup of buttermilk (1 cup milk and add 1 tablespoon of lemon juice or vinegar to make buttermilk) 3/4 cup oil ,mix everything well then stir in the diced apples with the orange juice. Put in a greased 13 X 9 in baking dish and bake in a 175 C oven until golden and check with a skewer.Mine was ready in about 30 minutes or so. Beef Kofta Kebabs


n a food processor finely chop a bunch of parsley,a medium sized onion and 4 garlic cloves.Put in a bowl with 500g of minced beef, 1 teaspoon grated ginger ,1 tablespoon of Al Amier kebab spice mix and 1/2 teaspoon of zhoug spice from Dical House and leading supermarkets, If you do not have these spice mixes you need to add 1 tspn coriander,1 tsp cumin,1/2 tspn cinnamon and 1/4 tspn of chili or cayenne pepper,salt to taste,1 tablespoon of lemon juice and 1 teaspoon of baking powder this will help to bind the meat together. Knead with your hands and form into sausage shape or thread on to oiled skewers or if using bamboo sticks make sure to soak these first so they do not burn on the bbq or under the grill. Grill under a medium hot grill for about 6-8 minutes on each side or turning the skewers. You can serve with a yogurt sauce ,made by mixing yogurt with some lemon juice ,finely chopped mint and season with salt and pepper. Ricotta and Cream Cheese Pie


2 packets of ready rolled puff pastry . Put one on the base of a pie tin. In a bowl mix 250 g ricotta (I used the creamy ricotta sold in tubs) 1 pkt of cream cheese (Philadelphia or similar) 2 eggs ,1 cup of grated mature cheddar cheese ,salt & pepper to taste and mix well. Spread onto the puff pastry base then cover with the other ready rolled puff pastry. Pinch edges to seal. With a knife make small dents in the pastry so it will not puff up .
