Torta tal-patata (potato flan)

Line a dish with olive oil pastry (recipe in the blog);  thinly slice 4 large Maltese potatoes; boil for two minutes in the microwave in some water, should still be firm and uncooked.  Thinly slice one large onion, chop 200g back bacon, four thinly sliced carrots and shallow fry till golden, add seasoning and a grating of nutmeg.  Add some rinsed frozen peas.  Grate one gbejna (cheeselet) and 100g cheddar.   Add some grated cheese and breadcrumbs at the base of the flan.  Layer as follows:  the bacon/onion mixture, the potatoes, grated cheese, repeat layers ending with potatoes.  Drizzle with some olive oil, season and scatter more grated cheese.  Beat four large eggs and pour over everything.  Bake for about 1.5 hours in an electric fan oven on 150 degrees or till golden.  Nice served warm or cold, even good for picnics!
