Stuffat tal-Majjal
Shallow fry 1 kg of lean pork cubes, 2 chopped Maltese sausages, 2 chopped onions, 4 cloves garlic, 6 large potatoes (cubed), 4 chopped carrots. Add 1 tbs mixed spice, 1 tsp curry powder, seasoning, one glass white wine, one can chopped tomatoes (or chop 5 large tomatoes), one bay leaf, and one mugful of stock. Add a handful of frozen peas. Simmer till sauce thickens. Nice served with some good crusty Maltese bread!
