Spinach jacket potato!
Bake 4 large potatoes which you would have cleaned, dried and pricked with a fork, for about 1 hour or till soft. Remove from the oven and split in two while still hot; scoop out flesh of potato leaving skins intact. Shallow fry one large chopped onion, 100g chopped bacon, 1 tbs of grated nutmeg, seasoning; add 100g of boiled chopped spinach. Mash the potato flesh, add the spinach mixture, add 100g grated cheddar cheese, one large egg, 3 tbs butter, 1 cup milk and mix well. Fill the potato skins with this mixture and top with more grated cheddar ( I used red Leicester for a more pungent taste); good served as an accompaniment to grilled beef/chicken or even as a meal on its own served with some nice salads!
