Smoked salmon vol-au-vents!

This is a quick and delicious starter!

Cook a chopped onion till soft in some oil;  add some good chopped smoked salmon, and 200g of good shelled prawns;  add 3 tbs of flour and mix well;  then add the zest of one lemon, 500ml skimmed milk, and season well.  Cook till sauce thickens….fill cooked vol-au-vent and warm in a pre-heated oven (fan electric 150/gas about 160) for about 20 minutes till warm and pastry is crisp.  Top with some caviar and parsley!
