Pulpetti tal-qarabagħli (courgette fritters)

Boil 500g chopped courgettes in salted water, drain.  Fry in some olive oil one chopped onion;  process together the courgettes, onion, 4 cloves garlic, 1slice bread, some grated parmesan, parsley, seasoning, one egg.  Form into patties, dip in breadcrumbs, and fry till golden.  Nice served on a bed of rice with a plain tomato sauce!DSCN6515DSCN6519
