Pudina tal-banana (banana bread pudding)


Banana bread pudding

This is a different take on the traditional pudina tal-ħobż, which is equally delicious! Just soak a couple of bread slices (I used wholemeal) in one mugful of warm milk and some hot water;  add 1 and a half sliced bananas, 2 tbs cinnamon, brown sugar to taste;  add 2 tbs butter, 2 beaten eggs; grease a dish and pour mix into it and flatten slightly;  add the remaining half banana slice to decorate the surface and sprinkle with brown sugar and some cinnamon.  Bake in a preheated oven (fan electric 175) for about 45 minutes.  Nice served with custard or vanilla ice-cream!
