Orange chip cake

ingredients:  250g butter, 250g sugar, 300g flour, 4 large eggs, zest and juice of 4 Maltese oranges, 1 tbs bicarbonate of soda, 100g chopped walnuts, 75g chocolate chips.

method:  Beat the butter and sugar till nice and fluffy;  add the eggs, one at a time, beating well after each addition, add the zest of the oranges; reserve some flour and mix the nuts and chocolate chips in it to help even distribution in the cake; fold in the rest of the flour, and the bicarbonate of soda and mix well.  Add the nuts and chocolate chips mixed with the flour, mix well and add the orange juice.  Bake in a preheated moderate oven (fan electric 175) for around 45 minutes or till golden.

Covering:  mix 4 tbs cocoa powder with 2 tbs sugar and some hot water;  mix till smooth and drizzle over warm cake.
