Tuna and tomato

Prepare bread base as described in the cheesy ftira;  top with sliced fresh tomatoes, 2 cloves chopped garlic,one small tin tuna, one tin anchovy fillets, one chopped onion, one thinly sliced pre-boiled potato, some capers, seasoning, and chopped fresh herbs (basil, mint, marjoram).  Drizzle with olive oil.  Bake in a hot preheated oven (250 fan) for around 15 minutes.

Aubergine and sun-dried tomato

Prepare bread base;  add sliced ġbejniet, sliced fresh tomatoes, chopped onion and garlic, sliced olives, 6 chopped sun-dried tomatoes, half an aubergine thinly sliced, season well, drizzle with olive oil and bake as above.
