Lemon cake with lemon curd

ingredients:  250 g margerine, 250 g plain flour, 1 tbs bicarbonate of soda, 175 g sugar, 4 tbs maple syrup, 4 large eggs, 2 tsp baking powder, zest of one lemon.

method:  beat the butter and sugar till fluffy, add eggs and beat well. Add maple syrup. Sift the flour, and dry ingredients; add to the butter mix; add zest.  Line a dish with baking paper and bake in a moderate oven (fan electric 160) for about 40 minutes.  Split in half and fill with home-made lemon curd (recipe given in the blog).
