Gazpacho (chilled tomato soup!)


This is surprisingly very tasty and is an excellent light and healthy lunch for a hot summer’s day!

GAZPACHO (chilled tomato soup!)

Whizz together in a blender the following ingredients:  1 kilo chopped and seeded tomatoes, one half chopped green pepper, 1 chopped onion, 2 cloves garlic, one half peeled, chopped and seeded cucumber, seasoning, one mugful of chicken stock, handful of basil, 3 tbs olive oil, 2 tbs white vinegar, 2 tbs tomato puree, 1 tbs sugar.  Chill well.  Finely chop one half green pepper, some seeded cucumber, croutons, one finely chopped hard-boiled egg and use as garnish.  Before serving add some iced water to get the right consistency.  Serve in small bowls, add some ice cubes, and garnish with croutons and chopped veg.  May also be served in shot glasses for a drinks party (try adding some vodka!)  Surprisingly very tasty and refreshing!!
