Crunchy coconut cookies!

In a processor mix 250g margerine with 300g flour and 200g coconut; add 1 tbs bicarbonate of soda and 200g sugar; add some vanilla drops and two eggs.  Form into balls and place on a dish lined with baking paper, flatten slightly and place half a cherry on each.  Bake in a moderate oven (fan electric 150/gas 160) for about 40 minutes or till golden.

Chocolate coconut cookies:  just add 2 tbs cocoa to the above mixture and proceed as above.
