Chocolate and orange curd muffins

For the orange curd:  Take the zest of three large Maltese oranges and set aside;  squeeze the oranges, put in a stainless steel bowl, add three large eggs and 100g of sugar.  Put bowl over a pan with simmering water and stir till thick.  Add the zest of the oranges and 1 tsp of butter.  Cool and bottle into sterilised jars.

For the muffin mixture:  Beat together 300g plain flour, 50g cocoa powder, 250g margerine, 225g sugar, 5 large eggs, 5 tbs milk, 1 tbs bicarbonate of soda.  Line 2 muffin tins (12 each) with paper cases; put one tbs of the muffin mix, top with 1 tsp orange curd, and cover with another tbs muffin mix.  Bake in a preheated oven (fan electric 175/ gas 160) for twenty minutes or till well risen.
