Brodu taċ-ċanga u qara’ twil u qarabagħli mimli

For the stuffing:  500g lean beef/pork mince, 100g lean chopped bacon, one small onion chopped, a handful of chopped parsley and some fresh sage, 50g grated cheddar cheese, 2 tbs good pickle, 2 small eggs to bind.  Mix well, and fill peeled and hollowed long marrow and courgette shells.

For the broth:  one large onion, 3 carrots, 1 turnip, 1 kg of good lean beef for broth, a good handful of fresh celery.  Put all these ingredients in a large pan with water, season to taste, and cook on a low heat for about 2 hours.  Serve the broth strained (if you so like) and add some fresh tortellini, then for a second course serve the beef, the courgettes, and the sliced marrow with some chips.
