Baked Macaroni with fresh tuna or swordfish

Boil 500g of penne.  Prepare a plain tomato sauce using one chopped onion, 3 cloves chopped garlic, about 500g chopped fresh tomatoes (or one tin chopped tomatoes), 3 tbs tomato puree, seasoning to taste, 1 tsp sugar, a good handful chopped basil, one cup white wine.  Simmer till tick.  Cut the fresh fish into cubes, prepare a bowl with 1 cup flour, 1/2 cup breadcrumbs, seasoning, 1tsp paprika;  coat the fish pieces and fry until golden.  You may also add one aubergine cut into cubes and fry them in the same way.  Mix the boiled pasta, the fish and aubergine cubes, 2 eggs beaten and the tomato sauce;  add some grated white dried gbejna (cheeselet);  put in an oven proof dish top with more grated gbejna or cheese and some breadcrumbs.  Season again.  Bake in a moderate oven (170 degrees fan electric oven) for about 30 minutes or till golden.  Nice served warm or cold!
