Baci cake!

Crush in a processor one packet of plain biscuits (morning coffee or similar), 100g hazelnuts, 100g almonds;  add 4 tbs cocoa powder and 2 tbs drinking chocolate. Add 150g sugar (about a cup); 50g melted butter, some vanilla essence.  Whisk 3 egg whites till stiff and fold in mixture.  Line a dish with rice paper and pile mixture on top;  bake in a preheated oven (fan electric 150/gas 170) for about twenty minutes or until an inserted knife comes out clean.

Topping:  Melt in the microwave 100g dark chocolate covering, 50g margerine;  beat well and add the 3 egg yolks and 3 tbs brandy.  Pour topping on cooked cake and leave in the oven for about 5 minutes than switch off and leave for about 15 mins.  Cut into squares when cool.
