Ingredients:

  • 1Kg Qarabaghli roughly chopped.
  • 1 Onion diced.
  • 2 Garlic gloves crushed and diced.
  • 1 Medium sized potato chopped.
  • 200g Each of fresh broad beans and
    peas weighed shelled.
  • Some fresh mint.
  • Chicken/Veg stock.

Method:

Saute onion, garlic and fresh mint.

Add the rest of the ingredients, when adding the stock just add enough to barely cover the veggies.

Simmer for about 30mins then blitz everything with a hand blender until smooth, check for seasoning.
