Ingredients:

  • 1 bottle white Maltese wine
  • 4tbbs clear Gozo honey
  • Sprig or two of fresh mint

Method:

Gently warm 200ml of the wine in a saucepan, add the honey, to taste, stir until incorporated, add the mint leaves and allow to cool. Remove the mint, mix in the remaining wine and serve cold.
This recipe is thousands of years old and was introduced to Malta by the Romans. Imperial Roman edicts in Britain from 92 - 277 AD prohibited the planting of new vineyards, in order to protect the established industries in the Mediterranean.
The Maltese climate was ideal for grape cultivation and archeological findings suggest a very strong wine production /consumption during roman times.
