Ingredients:

  • 1kg salted cod
  • 1kg potatoes
  • Olive oil
  • 1 spoon of nutmeg
  • 2 lemon juices
  • 2 beaten eggs
  • Salt and pepper
  • A pinch of chopped thyme and parsley
  • 3 minced garlic
  • Breadcrumbs
  • 150gr butter

Method:

    1. Rinse the salted cod well, remove the bones, pieces of salt stuck on it and the skin; then chop it to pieces.

    2. It is preferable if can leave it overnight in a bowl filled with water.

    3. Place the fish in a sieve, let it drain and then put it on a plate.

    4. Boil the potatoes, and when they’re ready peel and mash them.

    5. Put some olive oil in a pan and fry the garlic, onions and cod for 15 minutes at a low temperature.

    6. Insert this mixture with the potato one into a bowl and add the nutmeg, salt, pepper, juice, and the herbs. Blend well.

    7. Place the beaten eggs into the mixture and stir.

    8. Set the breadcrumbs in a flat dish and roll the mixture into balls, then roll them in the breadcrumbs. It would help if you add some flour to the breadcrumbs.

    9. You can bake the cod balls at a temperature of 180°C for 20 minutes or fry them, whichever you prefer.

Would this be good with leftover fish instead of salt cod?
