• 1 cauliflower
  • 1 cup whole wheat flour
  • 2 eggs
  • parsley (chopped)
  • Olive oil
  • Grated Parmesan cheese
  • Salt and Pepper


1) Boil the roughly chopped cauliflower in salted water until just tender. Hence drain.

2) Combine the boiled cauliflower, flour, eggs, grated cheese, parsley, salt and pepper.

3) On medium-low heat, add 1 tbsp of oil , form fritters (pulpetti - the same way you form meat pulpetti).

4) Cook until golden brown, turn and cook on the other side for another few minutes.

Difficulty: Easy

Instead of cooking meat or fish fritters, these fritters will be filled with cauliflower amongst other ingredients. This will help to keep you healthy and also filled. You can add some mashed potato and salad in order to fill you up.
