Ingredients:

  • 400 g ground almonds
  • 400g castor sugar
  • 4 egg whites (beaten)
  • 25ml almond ess (small bottle)
  • whole almonds

Method:

Mix everything together, till the sugar disappears, and the mixture gets sticky. Roll into small balls, put on pan over rice paper (its edible paper, if you don't have , doesn't matter), then put 1/2 blanched almond or glace' cherry on top.
Bake at a temperature of 180C for 15 minutes. If you like them soft, (that's how l do them ) if you want them harder cook longer.
