Biskuttini tal-Lewz Morr – Almond Biscuits

Ingredients:

  • 400 g ground almonds
  • 400g castor sugar
  • 4 egg whites (beaten)
  • 25ml almond ess (small bottle)
  • whole almonds

Method:

Mix everything together, till the sugar disappears, and the mixture gets sticky. Roll into small balls, put on pan over rice paper (its edible paper, if you don't have , doesn't matter), then put 1/2 blanched almond or glace' cherry on top.
Bake at a temperature of 180C for 15 minutes. If you like them soft, (that's how l do them ) if you want them harder cook longer.

      I HAVE USED THIS RECEIPE BEFORE AND ALTHOUGH THE AUTHENTIC RECEIPE DOES CALL FOR RICE PAPER, LIKE YOU I HAVE DIFFICULTY IN FINDING IT UNLESS IT IS A SPECIALITY SHOP. DON’T DISPAIR JUST USE WAX PAPER TO COOK IT ON AND THIS IS EASILY REMOVED AFTER THE BISCUITS HAVE COOLED DOWN AFTER COOKING THEM IN THE OVEN

      Hi, I found rice paper today at Minchinbury fruit market on Great Western Hwy. I think the owners are Maltese cause they have lots of Maltese products there
