Vopi marinated and shallow fried


Vopi are inexpensive yet very good small fish. They make an excellent aljotta (fish soup) and if you do not mind picking out the bones they are delicious fried.

Gut and clean the vopi.

Then chop or crush garlic,parsley,mint some lemon zest and juice ,some chopped chili if you like it spicy and a good pinch of cumin .

Fill the vopi with this mixture .

Prepare some seasoned flour.

Heat enough oil to shallow fry and let it get hot.

Dip the fish in the seasoned flour and fry until crisp.

Serve with a salad,rice or potatoes.
