Vegetable & lentil soup

Nothing is more warming on a cold chilly Winter day than a steaming plate or bowl of hot fragrant soup. This soup is made with vegetables and mixed lentils ,with some small fine pasta and a few minutes before I turn off heat I break open some eggs and let them poach a bit then turn off heat . A hearty supper served with crusty fresh bread,cheese & pickles.


• 1 large onion
• 4 carrots
• celery
• 3 marrows
• 4 potatoes
• cauliflower florets
• 150g mixed lentil soup mix
• 2 tablespoons tomato soup
• 1 teaspoon mild curry
• 2 ltr  water or chicken stock
• 4 eggs (optional)


Chop all the vegetables .

Heat some oil in a pot and fry the vegetables for a few minutes and add the curry.

Mix in the tomato paste and add the water or stock and the lentils.

Season and when it comes to a boil simmer on low heat .

When the lentils are done add about 1/4 cup small soup pasta .

When pasta is ready if you wish break in the eggs ,cover let it simmer for another few minutes ,then turn off heat and keep covered so eggs will poach nicely.
