Vegetable & lentil cottage pie


Heat some oil in a saucepan and fry a large chopped onion & diced large carrot,add 1 cup orange lentils and add 3 cups vegetable or chicken stock or water ,let it cook on low flame until the lentils are cooked.Add 1 cup peas,1 cup sweet corn,2 cups spinach,1 tin borlotti beans ,2 tablespoonfuls tomato paste, 1 teaspoon mixed spice and 1/2 teaspoon ground garlic,salt & pepper according to taste. Mash boiled potatoes with milk,some butter ,salt & pepper. Add 2 eggs and some grated nutmeg. Grease an oven dish then spread a layer of mashed potatoes on the base. Over it put the vegetable mix. To the remaining mashed potatoes add 1 cup grated cheese and spread on top of the vegetables.
